Pink Salt?

We have a good friend that introduced us to Australian Pink Salt. Think coarse sea salt with more of a flaky texture. It is harvested in the Australian outback in the Murray-Darling region from underground saline waters. The salt flakes themselves have a fantastically mild flavor. It is best used as a finishing salt. We used it in the picture above to season a homemade bococcini that we served with an arugula pesto. It is delicious and we have become great fans. Also, in using this salt we help control Australia’s inland salinity problem. Check it out ..

“The Murray-Darling Basin’s low rainfall and high evaporation have combined to concentrate salt in the groundwater. This salt is produced naturally from the underground brines in the Murray Darling Basin. A red pigment, carotene, is secreted from the salt tolerant algae. The underground saline waters have been laying dormant for thousands of years. By utilizing these waters the environment is improved and a beautiful salt is produced.”

Mother’s Day at Le Zie

le_ziePhil and I spent this past Mother’s Day with my Rents in one of our favorite cities to eat .. NYC! As if new haircuts weren’t enough to overjoy my mother and I, we hit up Le Zie in Chelsea for some late afternoon grub to really seal the deal. The adorable Venetian Trattoria is located in the heart of Chelsea and offers some seriously tasty dishes. We started with the Baked Goat Cheese, Sauteed Mussels and an incredible Eggplant Rollatini special. Next up, Sausage and Fennel Mezzemaniche and Rosemary Veal Ragout. We shared (and devoured) everything, including a few tasty martinis, before hitting the streets to work up another appetite. A great day had by all, for sure.

Wines of the Loire Valley

When Spring comes around, we get excited. Fava beans, sweet peas, morels, ramps, green almonds, asparagus and green garlic are all in their prime. We had the opportunity to do a wine dinner this past weekend centered around the wines of the Loire Valley in the heart of France. Heavier on the white side, the wines consisted of Muscadet, Chenin Blanc, Vouvray and Sauvignon Blanc which are dominant varietals in the region. We were able to bring forth and prepare a lot of spectacular fish for this one. We both agreed that this was one of our best dinners yet. Our guests felt the same way. Check it out!
