A special thanks

Just a quick post to thank all of the incredible vendors who helped execute the most outrageous reception of all time – OURS! Phil and I have decided that it’s impossible to say thank you as many times as we feel it’s necessary, so here is our one big thank you:

To all of the couples out there planning a wedding, USE OUR VENDORS! Seriously, use each and every one of our vendors. You will not be disappointed!

Let Edge host your affair in their stunning dining room and lounge. They’ll also serve up insanely delicious food and perfectly mixed cocktails.

Have Sarah at Allium Design take over flowers and decor. She’ll create an atmosphere you thought only possible in your dreams.

Call up Jesus at Pure Mix DJ and have your guests dancing ALL night long (like from the second they walk through the door to the very last song .. and then two songs after that!).

The Flour Shop will fix your sweet tooth with an oh-so-yummy wedding cake and any miniature dessert you can think of. Try their butter cookies!

And last, but absolutely not least, ask Alison Conklin to capture the magic. How can one person see ALL OF THIS in one night?

This was the start to a fabulous weekend in Washington DC; celebrating engagements and family with my sister, Kristen, and her new fiance, Matt. I had spent the good part of a month thinking of engagement gifts, racking my brain for that one unique present that they surely had not received yet. Finally, it came to me. Phil and I would simply do what we do best – wine and cheese! So we packed up the cooler, jumped in the VW and told Kristen and Matt to get ready for the most memorable gift of all – a wine and cheese tasting on their DC rooftop, courtesy of Sauced!

Press Day in Philly with Big Daddy

Its been a while but we got back in action with Big Daddy, Chef Aaron McCargo Jr. Last I saw him, we caught a Phillies game on the first base side with his brother and a friend. Nothing but fun and games and A LOT of laughs. It was my birthday weekend and it was a beautiful August night. Monday, however, it was back to business. We got the call to do some styling for Big Daddy as he rolled into a big day of press centered around the Share Our Strength organization’s “2009 Great American Dine Out” program. For those of you that aren’t familiar, Share our Strength is an organization that  raises money to help feed underprivileged children. Big Daddy is the national spokesman for the “Great American Dine Out” program which encompasses many restaurants that have agreed to donate some of the proceeds to Share Our Strength from diners who eat in their restaurants. Monday started off in Center City Philadelphia at the Fox 29 Morning Show. Appropriately, the theme was food that kids would enjoy eating. These included the Best Turkey Club Ever and a kid-friendly, fun and funky way of doing vegetable crudite .. with a Smoky Ranch Dip! (There is no denying .. the turkey club rules!) Almost immediately after the appearance, Big Daddy had to role over to City Avenue for the NBC 10! Show. Jill waited there patiently to set this segment up and make sure there was a seamless foundation to the day. We had been at the 10! Show with Aaron before and had made Aaron’s take on Shepherds Pie .. to feed 60 hungry audience members. If I remember correctly, not only did the audience get fed, the NBC staff rolled into the kitchen and had there share as well .. haha! This segment’s food was Grilled Stuffed Veal Chops with Lemon Brocolli Rabe.  It was more of a restaurant menu item-approach to help tie in the “Great American Dine Out” and entice people to go out to eat. Rumor has it, the segment was flawless and tasty (I love brocolli rabe and veal chops). Of course it was Big Daddy and Jilly doing there thing.

Winefest Memories

I just wanted to post a few pics from this year’s Pennsylvania Wine & Food Festival. It was our first year as food vendors and .. despite the downpour that accompanies every Sauced event .. we had an incredible weekend! Our menu included a beef and fresh mozzarella au jus sandwich with a roasted garlic aioli and, for all those veggie friends we have out there, a mushroom and brie panini with arugula pesto and white truffle. YUM! It was definitely a risk, creating a non-carnival-themed menu, but it absolutely paid off. Our tent brought something new to the Winefest .. and it was a hit! Just ask that guy who came back for a THIRD sammy ;)

Sauced caters No Kill Lehigh Valley Fund Raiser

40 Year Old Fondue Pot Makes Live Appearance

fondueI’m guessing it was three or four years ago when my parents decided to clean house and gather some goods to place in a garage sale. My brothers and I got the call that it was first-come-first-serve to obtain any item they were about to pawn off to the public. They’ve resided in the same house in Bethlehem Township for 20 years. Both my brothers and I were raised here through our early teens and college years. Needless to say, they have accumulated their fair share of “stuff” and decided it was time to reduce inventory. There was your typical garage sale merchandise, vases that lost their luster, various furniture pieces, shelving, nic nacs, etc. However, one item caught my eye immediately. It was a fondue pot still in it’s original box loaded with retro images and coloring. It was a wedding gift to my parents 40 years ago. It had its use but ran its course so I decided to take it. I think I’ve used it once at a house party I had on New Year’s Eve two year’s ago. It served as the vessel for some velvety white chocolate fondue. However, this past Friday Sauced used the 40 year old fondue pot at a fundraiser for No Kill Lehigh Valley at the Comfort Suites in South Side Bethlehem to keep our Tomato Confit warm for our Grilled Manchego Sandwiches. It worked perfectly!

Chef Segment on WFMZ this Friday

wfmz_logoIt’s that time again! Sauced will be appearing on WFMZ – Channel 69 News this Friday morning during their weekly Chef Segment. We’ll be preparing our favorite type of food, “Small Bites,” so tune in at 6:50am, 7:20am, 7:50am and 8:20am to watch us live!

Here are the recipes for the dishes we’re creating this Friday. We’ll also be ending the show with a surprise cocktail .. but you’ll have to watch the show for that recipe!

 

Grilled Focaccia Crostini with Fava Bean Salad and Ricotta

Ingredients:

1 cup Fava Beans, picked

¼ cup red onion, minced

1 T. garlic minced

1 T. Extra Virgin Olive Oil

1 tsp. fresh oregano, chopped

1 tsp. fresh parsley, chopped

1 lemon, zested

½ lemon, juiced

1 T. coarse ground black pepper

1 T. coarse sea salt

1 cup ricotta cheese

1 loaf focaccia bread, cut into 1 ½ inch thin squares

3 T. Olive Oil

Preparation:

Preheat grill or grill pan.

In a large sauce pan of boiling salted water, blanch fava beans for 2 minutes. Remove from water and shock in an ice bath. Peel fava beans and add to a large bowl. To the fava beans, add red onion, garlic, oil, oregano, parsley, lemon juice and zest. Mix well. Season with salt and pepper.

Brush foccacia squares with oil. Grill on each side for 1-2 minutes until well marked. Remove from grill. Spread ricotta cheese on each square and top with fava bean salad and serve.

 

Wild Mushroom and Gruyere Tarts

Ingredients:

¼ cup oyster mushrooms, sliced

¼ cup hen of the woods mushrooms, sliced

1/2 cup cremini mushrooms, quartered

2 T. minced garlic

2 T. olive oil

1 tsp. salt

½ tsp coarse ground black pepper

dash sherry vinegar

4 eggs

2 cups cream

½ cup finely grated gruyere

3 T chopped chives

24 mini pre baked tart shells

Preparation:

In a large sauté pan over medium high heat, add oil. Add mushrooms and garlic and cook for 3 minutes until softened and slightly crisp. Season with salt and pepper. Remove from pan and place in a food processor. Pulse a few times to chop mushrooms fine. Reserve.

In a large measuring cup or pitcher, add eggs and cream. Beat well with a whisk until evenly incorporated. Add cheese, chives and mushroom mixture and stir until combined.

Pour mushroom mixture into mini tart shells in a muffin tin. Bake at 325 degrees for 12-15 minutes until custard sets.

On the set of Big Daddy’s House

big_daddyWe’ve been filming Big Daddy’s House Season 3 for almost 2 weeks now, but today I FINALLY remembered to toss the mac in my shoulder bag so I could blog from the set. Yes, we’re live from the set right now! We’re actually watching Aaron cook down mushrooms for his Wild Mushroom & Gruyere Tarts. Yum!
